Today I wasn't lazy!  Got my Corona test (no Corona,  just my scared, over reacting ass needed to check it). Cleaned a bit a garage before our kitchen changing. And I made good dinner with help of my sister.
We did good and tasty! And even we are cooking this every week - everybody is tend to overeating. Even my 4 year old 😉

So it goes... best stupid person butter chicken with twist for Icelandic food market.
 
900 grams of chicken breast
1 cup of plain Skyr 
1 tbsp of lemon juice
2 tbsp of turmeric 
2 tbsp of garam masala (I added curry madras from Costco)
1 tsp of cumin 
1 tbsp of ginger (me lazy, added paste from Netto)
2 tbsp of garlic (same as ginger)
1 box of passata (red one from bonus)
1 can of coconut milk 
1 box of cream 500 ml
2 tbsp of sugar
1 tbsp of salt (or less)
3 tbsp of flour 

Cut chicken in cubes, put marinade into the bowl. Mix it well. Perfectly it should marinade at least 3 hours. I had 15 minutes. Then fry chicken, so it is cooked. Add 500 ml passata, cream, coconut milk, salt, sugar. Let it cook nicely for 10 minutes. Mix flour with a bit of water (tip: always add water to floor while mixing it, so there will be no clumps). Add this mixture and let it simmer for 20 minutes.



Use this time to cook rice. Best rice. No plastic bag shit, please. Here you have recipe for best rice, portion for 4-5 hungry peeps. 

2 cups of jasmine of basmati rice 
3 cups of cold water
1 tsp of salt 

Put everything together in pot. The secret is to keep the proportions - 1 cup of rice to 1,5 cup of water. It will be perfect. Just follow this: put the pot on high and let it bubble. When you see the bubbles change from high to low, put lid (you must!) and cook for 12 minutes. Take it from the heat, but do not open the lid and let sit for 10 minutes. After this time take fork and make it fluffy. 

Do it. It's better. Just flowery smell of great rice. 

You want to be super fancy? Do your own naan. Not as hard as you think. Everybody will love you. Local Indian restaurant will offer you a job. Do it 1 hour before cooking all above. And then use the time of cooking chicken and rice to fry bread.

So... ready? Take your fancy kitchenaid or cheap hand mixer. Both good enough. 

1 cup of warm water
2 tsp of sugar
3 tsp of dry yeast

Still it on low, give it 5 minutes to get bubbly.

Then add:
4 cups of flour
1 egg
0,5 cup of plain Skyr
1 tsp is salt 
0,5 tsp of baking powder
And add some dried garlic

Let is grow in warm place for 30 minutes or more. You don't have 30 minutes? Put bowl in nice, warm bath for 10 minutes. After this time take out dough, work it on top and add some flour, it is not suppose to stay on your palms. Then make 8 balls. Flatten them and oil them with some oil ( I use garlic oil for pizza). 
Fry them on semi high until golden brown (texture like sun).

Here you go. You are fancy, dinner is tasty. You are not broke. Amazing!
